About this bottle

Stellum Black is the premium brand extension of Stellum Spirits brought to us from the folks at Barrell Craft Spirits. The base for Stellum Black Rye bottlings feature a base of Indiana straight rye whiskeys blended with older straight rye whiskeys from Kentucky and Tennessee. The Lone Cypress is named for one of the world's most famous trees located on the coast of Monterey Peninsula. This limited edition release is bottled at a cask strength of 115.39 proof. Available at select US retailers beginning December 2022. (SRP $99)

Woodsy, conifer nose which could be cypress. There’s a smoky herbal sweetness. When i really stick my nose in i get cinnamon, apple, vanilla, cocoa, and a lingering briney smoke. Palate: The flavors from the nose appear with added caramel and burnt sugar, sweet enough to hint at creme brulee before a peppery smokiness swirls back in from the edges. Very aggressive, spicy apple pie with spruce tips baked in. Long spicy oak, herb and apple pie finish. This is better than ryes in the Barrell line, which is perplexing. Maybe the best rye on my extensive shelf. I’ll be sad when it’s gone. Great stuff.

There is indeed a sense of sea salt here, along with a light touch of bracing pine. Quite interesting, and not distracting in the least. Rather, it adds an air of reflection and curiousity. More high notes than low as it plays out on the palate. A slow sipper with perky rye and a long peppery finish. We can see this working exceptionally well in a Sazerac.

Sweet pine, spearmint, caramelized/candied citrus. Long finish with a perfect sweet and spicy that lingers. A fantastic rye.
