Bull Run Distilling Company takes their Temperance Trader Bourbon Whiskey, which is distilled from a high-rye mash in Indiana, and then matured and bottled in Oregon, and finishes it for 10 months in chinato barrels sourced from Oregon Winery Cana's Feast. These barrels had previously held the chinato, made from Nebbiolo wine and infused with gentian, mace, fennel, coriander, black pepper and more.

a bit sour on top, a bit sweet underneath. you can smell & taste the fennel & herbs but they aren't distracting. this would be a great bourbon for deli sandwiches or brined or pickled veges. a unique expression
