2019 Release A rich, Bourbon Whiskey by Dave Phinney for The Savage & Cooke distillery in Mare Island, California made from a Mash Bill of 75% Corn, 21% Rye, & 4% Malted Barley, aged for a minimum of 4 years in new charred American oak barrels & then finished in his Napa Cabernet barrels before being bottled at 44% ABV. It has a rich birth with notes of brown sugar, caramel, butterscotch & toasty oak; while a full life adds notes of vanilla bean, baking spices, maple & baked apples; that led to a long & balanced death. It is finished in casks that once contained Dave Phinney's Old Vine Wine (a blend of California Cabernet, Zinfandel, and Grenache). It is bottled at 88 proof.

Pretty outstanding bourbon here. Really nice oak and vanilla sweetness, with the tart grape from the wine barrel finishing. Really enjoyed this one.
Classic bourbon nose: caramel. Wine notes immediately on sipping that gradually diminishes. If in the mood, really nice.
