Nose: Cherry and caramel, vanilla, followed by pepper. Palate: Brown sugar, toffee, vanilla right up front. Followed by a long and spicy finish, rounding out with classic caramel notes. Overall: Excellent flavor. The overall profile sticks to classic, but is well balanced. The high rye percentage adds a good but of spice well needed. I am interested to see how this Texas aged whiskey compares to other Indiana distilled products using this mashbill.
