Waterloo No.9 Gin is distilled in Dripping Springs, Texas at Treaty Oak Distilling. It is made with Texas-harvested ingredients such as pecans, lavender, and grapefruit zest along with more traditional botanicals such as juniper, coriander, and anise. Waterloo was the original name for the city of Austin and the gin recipe is made with nine botanicals.

1oz neat. Juniper and earthiness (probably the pecan) on the nose. A quality I can only describe as vapor-like on the tongue. Flavors of juniper, lavender, and anise with a woody finish (again, probably the pecan). Nice and floral gin. Makes me want to look for the antique version for a little more character.

This gin’s distinctive lavender notes never overpower the senses or other accompanying spirits. Instead, Waterloo No. 9 offers a wonderful expansion to a cocktail’s flavor profile. In a classic 50:50 martini or G&T, depth and complexity are added to the palate.

The floral lavender is up front in both nose and taste and the juniper takes more of a back stage. Less sweet than say Tanqueray. A bit more dryness on the tongue than tanq. Its up there in my gin world so I plan to always stock.
