EYE Amber NOSE Pine, honey, fruit, graham, banana’s foster, marshmallow, and a light cakey note. The pine is super present… but not in a bad way. It’s like walking out on my porch (I live in a cabin on a mountain). PALATE Banana taffy, pine, vanilla, graham, wax, and a grainy sweetness with a touch of cake. Ok, not what I was expecting. The palate is quite a bit different than the aroma, but not terrible. FINISH Medium -> Herbal pine, caramel, graham, grainy sweetness, and saline.
About this bottle
Umiki Whisky is a blended whisky made with "local ocean side malt whiskies" and grain whiskies from other countries (not disclosed). It is a no-age statement release which uses desalinated water from the Pacific Ocean in its creation. The whisky is finished in Japanese pine barrels and bottled at 92 proof. "Umi" is Japanese for "ocean" and "ki" is Japanese for "tree." Available in the US and Asia in April 2020 and other global markets to follow in May 2020.

Nose: pine, grain whiskey sweetness, cherry hard candy. Palate: umami, nice fragrant and sticky pinewood, a decent salinity, caramel and brown sugar. Light orange zest as it transitions to finish. Finish: getting bourbon/grain whiskey finish.
Nose of unfinished pine and bright hard candy. Tastes of a Speyside-like wildflower honey imbued heavily with sawdust. Basically just tastes like drinking a young Speyside scotch in a lumber yard.
The bottle spins! Also, it’s good. The woody, piney taste is prevalent. It placed 8th in the 2023 Birthday Boy Bourbon Tasting. (I ranked it 7th.)
Nose of sea salt. Body of cherry blossoms. Finishes with forest pine trees.
