There’s something I can only describe as fiery about the nose on this. Not fiery like it burns, but fiery like the smell of a hot clay or brick oven, almost as though it’s still cooking just a little. Clay and roasted agave dominate, though I’m picking up notes of mint and other green herbs, pencil eraser, and some vague, nondescript sweet fruit way down deep. On the palate herbal, peppery and sweet with flavors of agave, vanilla and caramelized sugar and a lingering peppery finish. Enjoyable for sure.
