Eighth Notch is the eighth release from South Carolina-based Virgil Kaine. Named for the final notch in throttle of a diesel train, the bottling begins as a 5 year-old straight bourbon. Discarded vanilla beans are used to create a vanilla smoke which is then placed into toasted barrels and sealed. The bourbon is then transferred into these vanilla-smoked barrels before vanilla smoke is once again filled in the remaining space. The barrels are then sealed and the bourbon is aged for two months before bottling at barrel proof. Available December 2022 at select retailers. (SRP $80)

Nose: vanilla, caramel, smoke and roasted marshmellow Palate: oak and vanilla at the front, some bitterness in the middle, and then some more smoke and marshmellow at the back Finish: somewhat quick for the proof, but the smoke, vanilla, and oak notes are present
