Like walking into a paint store... I opened up my sample last night, and was hoping it would be as good as the only other Waterford I’ve tried: their Ratheadon. But no...this was a far cry from that one. Acetone-ish aroma. Taste a bit heavy handed on the baked bread, with a dose of wet grass and acetone. I know it’s not their production quality, since these guys are so detailed oriented and passionate about their trade. So I can only chalk this off to either (a) I’m simply not a suited for the barley that grows in this particular single farm, or (b) I bought a bad sample.
About this bottle
Waterford Ballykilcavan Edition 1.2 is made from 100% Taberna barley grown by David Walsh-Kemmis west of the Barrow in Co. Laois. Distilled in 2016, the Irish single malt matured in a combination of first-use French and American oak for three months longer than the Edition 1.1. It is bottled without chill-filtration at 50% ABV with no color or additives.

(Good Spirits Co. Glasgow – Virtual Irish Whiskey Tasting, 22 January 2021). Nose: Earthy, cocoa, butter, sweet caramel Palate: Oily, farmyard notes, earthy, spice and peppercorn Finish: Cocoa, oak, vanilla. Long finish. Came joint second out of the six whiskies, with 14% of the final vote for favourite of the night. (55% of those present said they enjoyed the whisky). All of the whiskies in the tasting came very close together in the vote for favourite.
Nose: Peat, very earthy. Wet. Taste: butter and almonds, toasted coconut, some orange. Its light but interesting.
