About this bottle

The initial set of Waterford's single farm bottlings for the U.S. showcases Irina 2015 barley grown on three different farms. All variables of production besides the specific locale of each farm were kept precisely in control, with the releases therefore designed to showcase the differences produced by terroir. Each was matured for just under four years, in a combination of casks including 35% bourbon, 25% French oak, 20% new American oak, and 20% VDN, short for Vin Doux Naturels, a sweet dessert wine from France. Casks were filled at approximately 72% ABV and the releases are each bottled at 50% ABV. Dunmore was grown by John Tynan in Laois.

The nose is not your typical Irish, I get some salt and citrus, maybe a hint of grass. The taste presents some more traditional notes and reminds me a lot of what I get with Green Spot, specifically some green apple on the finish. Up front on the taste, though, is a little bit of a sour twinge that dissipates when the sweet apple takes over. It’s hard to describe it, but it mirrors closest to that salt on the nose and reminds me a bit of sourdough bread or grains. It’s very interesting, but not likely one I’d buy again.

The nose is grassy with a dried hay semblance. Underneath are the darker notes of sun dried oak. The entry is straightforward with a sharp crispness of oak cask and perfectly balanced malted barley. There are a lot of keening high notes on the mid-palate with the wood taking control after a minute. The body is medium-light and the finish is long, but with a subtle ending on an fresh apple note. A lovely whiskey that demands several sips to fully grasp its delicate complexity.

This is a very smooth 100 proof. As smooth if not smoother than most 80 proof whiskies. Very easy to sip on neet or with a very small dash of water. Most of the flavors you’d expect to find in Irish whiskey but a bit brighter than most with added notes of citrus. It a bit pricey to be a regular but a very nice treat for a special occasion. This was given to me by a friend as a retirement gift.

Aroma is a touch waxy, but the dominant character is a butteriness that stays consistent and prevalent and brings with it a nice balance to the earthier and fruitier notes; Palate is a bit more raw and malty, but retains that buttery feeling though it’s sweeter here giving it a buttercream frosting character; Finish is soft, sweet and subtle as it drifts out sweetly.

Cherry, strong aroma, vanilla. Really nice aroma. Flavor is a little different with some spice/smoke tones, chocolate. Very flavorful and light.
