Aroma is herbal, medicinal, faint peat and wood tannin. Flavor is spicy, but a low smoldering spice, bitter and lingering on the tail. Ginger? Smoke dominates on top, fairly rich, carries the flavor through a long tail.
About this bottle
The third edition of Solum was made much like the previous edition, but this was matured for a year longer. The peat used here was harvested approx. 2 hours south of Seattle and was harvested in a sustainable manner to ensure the health of the bog for future harvests. Using 100% Skagit Valley Malting peated malted barley in the distillation process, it was then aged in a combination of new and used casks including refill Westland casks. Just 5,700 bottles are available globally with a launch in key markets beginning January 2025. (SRP $149.99/700ml)
