Nose: super fruity and initially funky. The funk goes away a tinge as you sit with it. A bit of wood polish. Some malt dank/funk. Sourdough comes out here for sure! A bit of brown sugar. Palate: definitely getting strong barrel notes here, wood tanins come in to balance the sweetness from the mash. Some date, raisin. Has a mellow malt chewiness. Caramel. Slight nuttiness. A hint of green apple? Finish: drying with a tinge of brown sugar sweetness. Warming.

About this bottle
This second Sourdough release from Westward Whiskey was made in collaboration with baker Ken Forkish. For the release, Forkish introduced his French sourdough Levain instead of pale ale yeast. Available exclusively for Whiskey Club member beginning August 2023. (SRP $99.95)

Nose: fruity and estery yeast, stewed dark fruits, sourdough bread. Caramel, brown sugar. Palate: slight heat, vanilla, caramel, a bit funky, with a nice caramel apple fruit note. Finish: light heat, gently fruity.
