Nose: Elegant. Cooked agave, warm caramel, toasted almond ice cream. A tease of crème brûlée Taste: A warm roller coaster ride of complexity. Wow. It changes as it opens up. Agave, baking spices, bold cinnamon, and a balanced herbal pop of valley terroir all play together simultaneously. A very silky mouthfeel that envelops and coats the palate. Very pleasing. Finish: Long and mouth watering. Cinnamon, sweet agave, and a dew drop of freshly picked honeysuckle nectar.

This is an additive free 100% blue Weber agave tequila that is produced in the Tequila Valley under the direction of Master Distiller Salvador Rosales Trejo (a.k.a. "Chava"). The agave is roasted 72 hours in stone ovens, crushed by Tahona, undergoes natural fermentation with fibers, and distilled 2 times in stainless steel and copper pot stills. This expression is lightly rested in ex-bourbon barrels for at least 2 months and bottled at 86 proof.

The nose really reminds me of the desert after rain - wet creosote, minerals. The barrel is in the background, and the agave is very much in control - there are some vegetal notes, herbs, parsley, with a little eathier finish. The short time in the barrel adds just a hint of caramel. The nose is what really shines here.
Lightly aged, agave forward. This is what tequila is all about. At 43 % ABV there is plenty here to hold your curiosity. I'll be sipping this all night. I found this in So Cal
