Despite only being 8 years, it has a complex flavor profile of bourbon aged much longer (12 years+) with a nice dark color. Finish is somewhat short. Uses different mashbill from the classic Woodinville straight bourbon. A must-try if you are able to!
About this bottle
Founders Brett Carlile & Orlin Sorensen experimented with 8 different barrels from Independent Stave Company before selecting on one made with 24-month open-air staves with a heavy toast and light char. Aged just over 8 years in these barrels, the bourbon was bottled at 100 proof. The first 500 bottles will be available at the distillery at 10am August 17, 2024 before a nationwide rollout begins in September 2024. (SRP $129)
