About this bottle

Chattanooga Whiskey Cask 111 is made from a four-grain mash bill which in addition to yellow corn uses three malted grains: rye malt, caramel malted barley, and honey malted barley. Chattanooga refers to this whiskey as a Tennessee High Malt, but technically this is a straight bourbon. Matured for a minimum of two years in toasted and charred barrels, Cask 111 is bottled at barrel strength without filtration at 111 proof.

Chattanooga 111 embodies the essence of Red Hots candy, both in its aroma and pronounced flavor profile. The scent is unmistakably sweet and spicy, evoking memories of the iconic cinnamon candy, or fireball whiskey if you prefer. Taking a sip reveals a decisive and confident embrace of the red hots theme, with an intensity that leaves no room for ambiguity on my palate. In celebrating its decisiveness, this whiskey crafts a memorable experience for those who appreciate this flavor profile. It has a bit of oak and other general bourbon flavors in the background, but the intense Red Hots character showcases a distinct personality, making it a standout choice for those seeking a unique flavorful bourbon experience. Despite its boldness, the whiskey manages to balance its intensity, ensuring that the overall experience is enjoyable and memorable. It actually seems like a perfect choice for fall and I can see myself going back to it pretty regularly over the next few months. I personally don’t think I’d want to drink this one constantly, but it could hit a spot from time to time. This was tasted neat in a Glencairn.

I’ve heard great things about this distillery and see it commonly on shelves. It was on sale the other day and figured I’d give it a shot. I had this neat in a glencairn glass. The nose was strong with a cherry, spice, and vanilla sweetness to it. The cherry and spice was quite strong which got me really excited. The nose kept me coming back for more. The palate, whoa, this was like a cherry hot tamale candy! The spice came through as cinnamon for me and the cherry lasted the entire time. The proof was great in that it lingered and the mouthfeel was fantastic. The finish kept the hot tamale candy taste with a little heat but not an ethanol heat. This was a cinnamon and cherry heat which tasted fantastic. I was by far blown away on how great this pour was for a $33 bottle (on sale). I’ll definitely by another when empty and try their other offerings.

3 out of 5 because it is a solid price for a cask strength. Color: Warm amber color. Legs take quite awhile to form, but when they eventually do they are large and very slow. Nose: very unique smell. This one will burn your nose. It must be the malt I’m smelling. It isn’t familiar. Taste: I get a caramel and warmth on the front. Some hug. It turns into that leather taste that isn’t my favorite bourbon note. Some spice towards the end. Finish?: pretty long finish with some spice that lingers. Water?: an ice ball helped tone down the leather. Maybe it is just the chill of it. Still primarily leather and a spice finish to me. Got better once it got watered down.

Sophisticated nose suggests something you might bring to a manly book club. Black licorice, dill, vanilla, bread dough, and a hint of dark fruit. Also a savory note, thyme or eucalyptus. Palate comes in hot and i added a couple drops of water. The doughy bread flavors and anise stick around, joined by raisins, cherry, butterscotch, caramel, sagebrush and something like the inside of a weathered tin cup. Herbal umami notes persist on the finish, joined by dough, leather and baking spices. My first experience with Chattaooga = good first impression.

This started out decent for me. Neck pour was pretty good but coming back after some Dickel8yr this tasted strange. Tried again another night and was picking up something under the main flavors that was off. I dont know if its the youth of the whiskey or the new make in general but I couldnt drink it. Some kind of funky sour ethanol note that once detected was all I could notice. I gifted it to a co-worker hopefully he will enjoy it as I think most people like this stuff.....65/100.....Im sure I could choke this down if I had to but decided against it

At the distillery. Darker copper color, absolutely hangs on the glass. Only two or three very slow moving legs. Nose is loaded with baking spice and a hint of eucalyptus. Tart cherries, stewed apple, a hint of vanilla... Much softer and instantly warming on the sip. Finish is medium length with lots of complexity: chocolate, dark caramel, baking cacao and prunes. Faintly reminiscent of a German chocolate cake eaten in a sawmill. It's really good... Far more complex and interesting than the 91.
