L: Mostly clear, oily, lots of thin slow legs; N: Cinnamon, mashed banana, applesauce, brown sugar, mild vanilla, marzipan, peppery, wild flowers, cola, dark cherries, grassy, smoked maple; M: Medium body, medium+ alcohol, tingling acidity, bitterness, sweet, fruity pepper, cola, charred maple syrup, black cherry jam, blue grapes, wild flowers, caramelized banana, applesauce, baking spices, medicinal/herbal; F: Pleasant to tolerable burn, smooth & spicy finish, herbal (gin-like) with some sweet cola lingering notes. Overall: Sweet, herbal & spicy. Good take on a spiced rum, nice play with the botanicals & spices. Pleasant mouthfeel with layered flavors. The rum juggles between being an herbal & gin-like spiced rum to more of a fruity baking spices one. Although it does so elegantly. Mostly for cocktails with a mixer such as ginger.

Produced by the Domaine Pinnacle orchard and distillery in the Eastern Townships of Quebec, Chic Choc Rum is the latest edition to their portfolio of micro-distilled spirits. It's named after the Chic Choc Mountains where the six-spice blend--peppery green alder, pine forest spikenard, whiterod berries, lovage root, sweet gale seeds, and wild angelica--used in its production are harvested from. This rum is the only artisanal rum using Nordic spices grown in Quebec.

Distiller notes say it well. Peppery with rich brown sugar/maple syrup as well as baking spices and a hint of gin botanicals. Not your average spiced rum, in a good way. $32 in Ontario.
