Made in Eastern NC with surplus Sweet Potatoes. This gives Covington a rich, oily mouthfeel and an almost savory flavor profile. A light sweetness is there, but balanced well by a vegetal, earthy note. Goes well with tonic, but it really shines in heavier drinks like a Dirty Martini, Bloody Mary, or a Gibson. I use this in a Gibson variation that I call a "Tarheel Gibson"...A vermouth glass rinse, Covington Vodka, high quality cocktail onions (which are becoming almost impossible to find), topped with a sprinkling of fresh ground black pepper. They also have two of the best slogans "The Best Yam Vodka on Earth" and "American Vodka that's Gluten Free & Putin Free".
