Was excited to see an Australian gin on a shelf in the midwest. Was also surprised by how strong the anise taste was. Tried it in a gimlet and a g&t with a splash of lime to take the edge off. Good overall. I bet it makes a great negroni, though I have yet to attempt. I would rate it higher except the juniper was relatively low and it hid in the gimlet. I tend to like high juniper, low floral gins.
About this bottle
Gin fans Matt Jones, Stuart "Stu" Gregor, and Cameron "Cam" MacKenzie founded Four Pillars in 2013 as their way to contribute to Australia's craft spirits industry. They named their distillery after their four pillars approach to gin production - "stills, water, botanicals, and love." This Rare Dry Gin, the distillery's first gin release, celebrates this approach. Beginning with sourced Australian grain spirit, this gin is made with triple-distilled Yarra Valley water and the following botanicals: European juniper berries, Australian lemon myrtle, Tasmanian pepperberry leaf, Yarra Valley lavender, angelica, green cardamom, cassia, coriander, star anise, and organic oranges.

Strong and alcoholic on aromas Surprising sweet on palate, floral, vanilla and easy to swallow Paired very nicely with Fever Tree, it has a very distinctive vanilla like flavour that sets it apart from others
One of my favourite gins. I adore the citrus foward flavour in this gin from the lemon myrtle and Aussie oranges. It helps the exotic hints of cardamom & star anise.
Surely the most versatile and delicious G&T gin on the planet today. Huge orange aromas make for a delicious G&T with fresh orange. A revelation!
The perfect gin for a GnT. Pairs well with orange over other citrus. This gin holds a permanent place on the shelf.
For some reason, all of the orange comes off very savory to me. Like sage or Bayleaf. Not my cup of tea.
