GMO(유전자조작) 일체 안씀(곡물, 효모, 효소까지). 직접 재배한거 씀. => 다른곳은 아닌데가 많나봅니다(?) 1. 증류시 헤드와 테일은 안쓰고 하트만 씀 => 이건 보통 많이들 그렇게 하지 않나요(?) 1. 원액 자체 생산 1. 오크통의 그을린 정도를 차별화함 1. 12-24개월 숙성 누가 보면 코발 위스키 마시는 줄 알겠네요...ㅋㅋㅋ 아무튼 코발 라이 쿼터 캐스크 피니쉬인데 코발 라이도 100% 유기농 호밀만 썼다고 합니다 향 : 달달한 바닐라인데 약간 오렌지 프루티함이 느껴집니다. 알콜향이 가볍고 약간 화사하지만 알콜스럽지는 않습니다. 굳이 표현하자면 15분정도 씹은 껌에서 나는 단느낌같습니다. 달긴 단데, 막 달지는 않는.. 입으로 향을 들이마시니 달달하다가 한티스푼 메콤함이 살짝 지나갑니다. 맛 : 화사하고 프루티한 느낌이지만 전체적으로 스파이시함이 두드러집니다. 호밀의 기운이 나오려다가도 알라키의 꽃, 바닐라, 프루티에 막혀버립니다. 그렇지만 목을 넘어가면서 이내 튀어나옵니다. 한방 툭 치는게 있네요 피니쉬 : 툭 친뒤 스파이시나 뒷맛이 열심히 올라오지만 체급이 안됩니다. 금새 사라져버립니다. 그저 따뜻한 매콤함만 남겨둔채... #8년숙성, 최대2년정도 숙성시키는 코발라이 우드 피니쉬) # 체급차이 극복을 못하네요, 살이 하나도 안찐 가느다란 중학생 2진 느낌 #술잔 속 향이나 맛들끼리는 내가 먼저, 니가먼저 하면서 발버둥치지만...

Quick hit review #1: I caught up with a friend at my favourite bar when I flew down for work. I tried 5 whiskies before I jumped on the plane. I was keen to see what Billy Walker could do with a new distillery. Was it his magic or Glendronach's or both that made his releases a winning combination in his time there. Based on this and the portwood I tried it seems like it was a combination effort as out of the 5 drams his efforts were 4th and 5th. Thinner and rougher but more interesting than the portwood which was the worst of the night.

Pale gold. Nose: chocolate, butterscotch, honey, cinnamon, wood Taste: a bit oily, kick of pepper and cinnamon then honey and a bit of oak Finish: nice balance, spicy and honey With a few drops of water the nose and palate softens, less spicy and the oak becomes more pronounced

Nose: ham, sweet, tad vanilla Very very smooth, salt pork, floral, marzipan Smooth finish, banana and vanilla

Wreaks of a young whisky. Pale in colour. A little rope in the aftertaste.
