Color: Light golden-copper Nose: Cherries(!?), leather, Palate: Nutty and sweet. Just a little bit spicy. Slightly bitter, but nothing off putting. Finish is medium with some lingering nuttiness and perhaps some vanilla. Apparently, this offering from Hirsch is a blend of a 3-year, 9 month old bourbon along with some older 8-year bourbon thrown in. The result is a somewhat "youthful" profile (the relatively light color is also an indicator). Nonetheless, it is still very good. Truth be told, I had some at a restaurant a few weeks ago, and liked it enough to track-down a bottle. I also want to mention that I had Hirsch's "Horizon" last year (or maybe in 2021), and if memory serves, I think I prefer this.
About this bottle
The Bivouac is a release from HIRSCH which combines two straight bourbon whiskeys which were distilled in Bardstown, Kentucky. The majority of the blend features 3 year, 9 month-old bourbon which has a mash bill of 74% corn, 18% rye, and 8% malted barley. It is supplemented with some 8 year -old bourbon with a high malted barley recipe. According the brand, the mash bill was inspired by the original A.H. Hirsch 16 Year Reserve Bourbon. The Bivouac is bottled at 100 proof and available in select markets nationally beginning October 2022. (SRP $55)

NOSE Caramel corn, ground corn, dried fruit, some vanilla candy and a light bit of waxy candy corn and herbal. Not very complex or unique, it has a very standard, everyday profile for a younger bourbon. PALATE Caramel, ground corn, vanilla candy, dried fruit and touches of oak, candy corn and peanuts. Like the aroma, it’s not bad, just very standard, middle-of-the-road, in the profile and delivery FINISH Med-short -> Caramel, vanilla and a light herbal fade.
Sweet cinnamon on the nose, with a touch of vanilla and fresh baked bread. The palate continues the light and easy sweetness, with an overlay of honeyed oak, toffee and bittersweet cacao. Some peppery heat on the short finish, but overall, a solid, smooth sipper that is ideal for cocktails. A friendly bourbon that will keep you coming back
I love the high proof on this bourbon! Super peanut buttery with a nice sweet finish also has a slight peppery back bone that carries the whiskey throughout your palate. Aroma is beautifully bourbon.
The youth of this product comes through. It could be okay in a cocktail but it’s very cereal grain forward. Doubt I will replace this bottle.
Pretty smooth. A little peppery and not super sweet, but not bitter or earthy either. A little thin.
