A balanced, Irish Whiskey from Barony of Duhallow, County Cork, Ireland distilled in copper pot stills with 100% local Heirloom Barley & pure Irish spring water. Then it is aged in ex-Bourbon barrels & ex-Oloroso casks; before being bottled at 40% ABV. It has an aromatic birth with notes of grain, fruit & spice; while a delicate life adds notes of barley & Sherry; that leads to a delicate death of medium length with a hint of smoke. This expression is a blend of malted and unmalted barley that is triple distilled in a copper pot. It is then matured in a combination of ex-bourbon American oak and ex-Oloroso sherry casks. It is bottled at 40% ABV.

Nose of caramel, vanilla, oak, a touch of pear; fairly simple. Lightly sweet taste with pepper and spicy cinnamon. Neat it’s relatively one dimensional and hot for 80 proof, though it markedly improves with a little water, which exposes richness, body, and sweet honey, and really brings out the wine.
Light hay color. On the nose, I get rubber and tire store. Sweet up front, with a very brief vanilla and cherry, then a sharp bite and a long, spicy, leathery finish.
A little disappointing, no interesting flavors to really pull and does have some harshness too which you’d expect to be masked with a sherry cask
Raisin, granola, and wine notes on the nose with a delicious fig, nougat, raisin and cookie concoction palate and sweet caramely finish.
Small bit at start with and sweet floral smooth finish.
