About this bottle

Kingsbarns Doocot is the brand's flagship whisky, replacing the former Dream to Dram which has been retired. It is made with barley sourced just 6 miles from the distillery in Fife. Using a long fermentation and slow distillation, the single malt is distilled and aged in two barrel types: ex-bourbon which accounts for 90% of the whisky and ex-Portuguese red wine casks which have been shaved, toasted and recharred making up the balance. Incidentally, Doocot — pronounced "doo-ket" — is the Scots word for dovecot, a freestanding nesting shelter for doves and one of the architectural features of the Lowlands distillery. Nose: Light and fresh. Tart apple, white grape, and gooseberry. Honey drizzled malt with subtle vanilla and milk chocolate. There is a floral grassiness that holds it all together. Palate: Fairly oily viscosity. Soft and velvety. Honeyed malt with vanilla and gooseberry is slowly pushed aside as warm barrel spices swell with soft oak and hints of semi-sweet chocolate. Finish: Medium length. Soft oak and barrel spice with hints of sweet malt. Summary: This is a perfect example of modern Single Malt Scotch. This bottling is still young for a Scotch, but the long fermentation and slow distillation has really made a beautiful whiskey. Not a fault to be detected. Kingsbarns should really be on your distilleries to watch over the next decade.

Welcoming nose of malt and light vine fruit. Sweet entry on the palate with a rich malt character that within a few seconds transforms into a berry jam character. Fruity, well balanced and warming, this whiskey is quite remarkable. The body is medium-light, but with such a roch texture that it seems heavier. The finish is long and leads out with a raspberry patina.
