Nose Fresh cut grass and Hay, cinnamon, dried plums, herbal medicinal cabinet, wet wood Taste Starts with sharp burn that quickly disappear and give space to warm fall flavours with young oak character l: strong cinnamon with pear, then liquorice is becoming dominant welcoming transition to medicinal notes Finish Long and dry finish with dry dark fruits, cinnamon and liquorice I think this an amazing gin that is good for sipping or old fashioned. It definitely has a punch and more aggressive then whisky or rum but the spiciness it can deliver worth it.

The barrel aged process makes me appreciate it as if it was a whisky. Really smooth on floral at first then the long lasting taste of wood takes its part of the story
The gin very well rounded. the American Oak gives a nice depth and spiciness to the gin. Hints of Vanilla and Pepper
Drank straight, tastes something like a nice Old Fashioned, properly made with rye of course!
Very very tasty
