About this bottle

Koval is a grain-to-bottle distillery located in Chicago. This whiskey is produced from 100% organic rye sourced from a Midwest co-op farmery. The whiskey is aged from 3-4 years in 30-gallon, new charred barrels. All Koval's whiskeys are single-barrel bottlings so slight variations may occur.

On the nose, I get notes of herbs and spice. The palate is sweet with notes of baked apple, caramel, hints of chocolate and peppermint on the aftertaste which as acts as though it cleanses the palate for the next sip. It also has some spicy notes that are reminiscent of bourbon but without that harshness you sometimes get, which is pleasant. All in all, a really great bottle that I would purchase again whether for a friend or for my own home bar.

This rye isn’t like most others on the shelf and for once that is a good thing. Lots of caramel and butterscotch up front but still a good rye spice with some wood notes. A great sipping rye that while toned down a bit to sit closer to bourbon, Koval still tastes like rye for a change.

Not my style, I suppose. Smells of leather, metal, and polished wood (or some sort of household cleaner) a reminds me of a dentists office. Smooth, spicy flavor, with a gentle finish. Not a lot of subtlety on my palette - the oakiness overpowers everything else.

I split this sample over two nights to let it breathe but i think i preferred it on initial opening. Ryish woody enthanol, bit of sweetness, hint of cherry and maple syrup. Not bad but wouldn't be reaching for another sample. Nearly $80USD over here in nz

Nose: acetone (I use acetone at laboratory and can't get rid of this association) and pepper Taste: rye, pepper, oak Texture and finish: silky and hot on mouth. Finish spicy and hint of sweetness at the end, like from all-bran cereal

Take your time with thus one. I thought i preferred the millet, but not anymore. Complex, very balanced. Herbal rye, e.g. dille and mint, but also typical oak/bourbon sweetness and lovely chocolate in the finish.
