Old Elk Straight Wheated Bourbon is made with a mash bill of 51% corn, 45% wheat, and 4% malted barley. It's aged for 5 years and bottled at 46% ABV using a "slow-cut proofing"--adding Colorado mountain water to bring the bourbon to bottling proof over weeks instead of days.

Just finishing this bottle. Took me a while to finish. Bought 9 months ago and first pours had sweeter flavor, but then half way through the bottle the sweet flavors started to fall flat a little. It's not a bad bourbon, but not sure I'll get another bottle. Toasty butter toffee taste that sticks to the tongue and pallet. Decent spice flavor to let you know it's got some zip to it. Finish falls off quickly, doesn't last long, but is respectable given the average ABV at 46%. Strange thing about this bottle is the cork shrinks so it gets loose which probably keeps air into the bottle. So as the bottle gets towards the end, it's no surprise why it starts to fall flat some after 9 months. Put a tighter cork in it! Great thing about this bottle is I purchased it on clearance for like $44, normally goes for like $70.
Floral, toffee, caramel and vanilla nose. Comes in very smooth, creamy and sweet. I can definitely taste the wheat which isnât overpowering and is nicely balanced by the sweetness. Itâs quite unique and I really like the flavors this mash bill produced. Itâs got a nice thick mouthfeel and medium finish. Very enjoyable overall.
Shoe polish nose. Bits of leather. The fresh weather continues into the body, with a lot of earthy notes. Almost like a mushroom teriyaki. As it opens up, the sweetness moves forward with a red delicious apple sort of profile, more earthy than sharp and sweet. Apples continue to come forward through the pour as you go back to it.
I thkight this was a very good and easy drinker and with some nice variety to the flavor. Starting neat it was smooth with some citrusy/fruit tang to it followed by nutmeg/spice (but notnspicy). With an ice cube it got much sweeter with more of a banana/custard finish to it. Very good first impression.
Nose: sweet, minty, flat(?), cardboard, bready, rich Palate: not very complex, thin, methol-y, drinks more lime a rye to me Finish: short Overall: I like a bunch of their pours, but this one isnât my favorite. Not sweet like you would expect from a wheater. I think it has more of a Wild Turkey profile.
