Nose: A proofy nose. Sweet, nutty, oak, and hints of raspberries can be found underneath. Palate: Dark chocolate, sweet oak, brown sugar Finish: Medium the sweet oak lingers at the end It's very rare that a pour drinks hot in a good way. Even though this is only 90 proof, this bourbon has a longer finish that I'd expect as well as a kick that's more reflective of its balance than from raw proof. It's delicately balanced with sweet and oaky notes. Impressively more complex than I expected, this sat on my shelf for awhile but I'm glad I revisited it. A nice sipper when you have time to sit and appriciate it.

Located in Seattle's Capitol Hill neighborhood is a small, almost nondescript building that is home to Oola Distillery, the makers of Oola Waitsburg Bourbon. C American Whiskey is the first release in their Whiskey Discourse Series, an experimental line meant to initiate conversations around non-traditional whiskey aging and blending practices. This one begins as their signature Waitsburg Bourbon, distilled from a mash bill of corn, rye, malted barley, and wheat. After aging 4 years in new American oak, the bourbon finishes for 9 months in French oak barrels that once held Cabernet Sauvignon.

Grain aroma, unassuming. Almost floral. Sweetness from the wine with tons of oak. Big kick tail, high proof burn. Fruity sweetness right at the beginning that disappears quickly into the wood. Stunning flavor though.
It’s kinda tasty very enjoyable drink to sip on, you can definitely taste the wine barrel they aged this whisky in but in a pleasant way.
