This has some complexity to the taste. You get overtones of the bourbon barrels it started but you can get the sweetness from the sherry casks it finished aging it. There is also a bit of spice but not harshness or burn.
About this bottle
Pearse Lyons Distillery (est. 2017) is based in The Liberties area in central Dublin, but the whiskey used in this blend was sourced elsewhere. The whiskey here was first aged in ex-bourbon for four years and then the barrels were blended and the whiskey was re-casked in ex-sherry casks for an additional four years.

Great mouthfeel, not too thin. Smells like vanilla , sherry flavor comes through strong and is very one note, but still pleasant. Nice bite at the end.
Very sweet. Lots of molasses on the nose and not much else. It’s nice but not hugely complex.
