Founded by Dr. Pearse Lyons (1944-2018), the Pearse Lyons Distillery, est. 2017, is based in The Liberties area in central Dublin. The Original Irish Whiskey contains some of their own malt whiskey that was distilled on the stills now in place at the Dublin distillery. A blend, this whiskey was aged between 3-5 years in former bourbon barrels.

For a young blend this is very light and has a lot of flavor. In part aged in an ex bourbon cask that also played host to the Kentucky stout, there is a plume of smoke within this spirit that is very pleasant.
On the nose, slight perfume and orange blossom. The taste is another thing entirely. Honey at first leading into sweet smoke and lingering vanilla. A very interesting dram indeed!
A simple, inexpensive Irish whiskey. Bland flavor profile, but very easy to sip. One of my daily favorites if I’m not looking for anything fancy
