Peerless Single Barrel Rye Finished in Copper & Kings Absinthe Barrels is a collaborative bottling between the two Louisville-based distilleries. Peerless uses a sweet mash rather than a traditional sour mash to make its rye. After its initial maturation, it is finished in a Copper & Kings absinthe barrel. This is bottled at barrel proof without chill-filtration.

Should have let the absinthe barrels dry allowing the absinthe to evaporate from the barrels a bit more. It is too overpowering with absinthe. It reeks of absinthe... and I do mean reeks. It should have been a hint of absinthe to compliment the herbal notes found in Rye. But instead it's absinthe with a touch of rye. A swing and a miss in my books

On the nose: strong licorice with notes of vanilla On the palette: strong, strong licorice followed by rye spices and a touch of heat that lends itself to a nice finish Overall an absolutely incredible bottle. The absinthe finish is strong but it adds to the complexity of the pour. If you get a chance to try it, absolutely do.
