About this bottle
The base spirit is made from organic grains of wheat, barley, and rye which had a long fermentation. It was column-distilled and then aged for two years in virgin air-dried oak. After aging, organic botanicals--juniper, coriander, cardamom, cassia bark, orange and lemon peels--are macerated with the spirit for 24 hours. It is then re-distilled in copper pot-stills with lavender, chamomile, and elderflower which are held in baskets within the still. After stabilization and aeration, the gin is bottled at 57.1% ABV. It is not chill-filtered.
