NEAT NOSE - I actually agree with some of the notes advertised on the back of the bottle. I get the cherry cobbler and gingerbread cookie notes. I’m also getting oak a hint of citrus, maybe lemon peel. PALATE - On the palate, it’s immediately drying. I get tons of oak with ginger. The mouthfeel is slightly viscous. FINISH - Long, but dry. Not my favorite finish to be honest. BUY? - Yes. This is a bold, spicy rye if you like those. I don’t find it sweet at all. BUY AGAIN? - Still Austin just started doing Single Barrels of these so I imagine I’d pick up one of those in the future.

This is just the second cask strength offering from the brand. Master Blender Nancy Fraley blends all Still Austin's spirits. The label was designed by artist and Texas-native Marc Burckhardt. Nose: Spearmint and sweet wood Palate: More spearmint, spice, rye Finish: Short finish, sweet and spicy Still Austin's rye whiskey is made from 100% rye, the overall profile of this pour reminds me of a very familiar 95/5 from Indiana. Another interesting aspect of this whiskey is it's proof: at only 116 it's only 16 points higher than Still Austin's standard rye which comes in at 100 proof. I would love to side-by-side this with Bulliet Rye, this pour is overall so reminiscent of the classic rye whiskey.
Received a sample from a friend. Glass: Glencairn, rested 15 minutes. Color: Medium-dark amber. Nose: Lots of earthy and vegetal notes with some mint. Palate: Baking spice and clove. Finish: Long length with medium heat. Splash: A spicy minty note appears. Overall: 8/10 - I have had some bad experiences with Texas whiskey, but I can't find a fault here. It's definitely an above average rye, and the price doesn't break the bank. Still I wonder what more time in oak could have accomplished.
An elegant, Cask Strength, Single Barrel, Rye Whiskey that is crafted in Texas with 100% local rye & bottled at 116 proof. It has an aromatic birth with notes of cinnamon-butter crust, crystalized ginger, lemon zest, apricot streusel & coffee cake; while a rich & spicy life adds notes of grilled peaches, mint ice cream, apple & marzipan dumplings & gingerbread; that led to a balanced death of medium length with notes of brown butter, mint leaves & muddled cherries. The nose was very pleasant given the high proof. Apricot, caramel and vanilla lead towards a hint of pine The palate is warm and buttery with an instant hit of vanilla and banana bread. A slightly tart and pine inflence as you chew with some sassafras notes as well The finish is fairly long with more than enough pepper to let you experience Texas Rye! Overall, very happy with this 100% Rye!
