A sweet malt with a hint of chocolate and dark fruit on the nose. The nose is way more funky than the taste, which is milk chocolate, honey, and a little bit of red apple. For such a low proof, the finish sticks around and circles back to some of the malt that was on the nose. After a while the chocolate is less prominent and it seems like a softened Speyside. Overall it’s well executed and pleasant, nothing spectacular and not what I would expect from an Irish finished in Stout barrels.
About this bottle
This is the second release of this cask finish from Boann Distillery in Boyne Valley. It is is a blend composed of 50% wheat whiskey, 35% malt whiskey, and 15% grain. The blend was first matured in ex-bourbon barrels before being married together and finished for 6 months in ex-single malt sherry casks that were previously used to mature O'Hara's Imperial Stout, also for 6 months. The whiskey is bottled at 43% ABV, with no chill filtration or added coloring. It is limited to a 3,000 bottle release as of November, 2021.
