Two Stacks is an independent whiskey bottler. This Irish whiskey is made of a blend of three styles of whiskey: grain, malt, and pot still including a small amount (2%) of peated malt. Barrels used in its production include virgin oak, ex-bourbon and oloroso sherry butts. It's a no-age statement release that is bottled without chill-filtration at 43% ABV.

An elegant, Blended Irish Whiskey by Shane McCarthy, Donal McLynn, and Liam Brogan for the The Great Northern Distillery in Down, Ireland crafted with a blend of grain whiskey aged in virgin oak and bourbon oak (80%), as well as pot still whiskey aged in Oloroso sherry casks (8%), bourbon cask matured double-distilled malt, and a smidge of peated malt aged in bourbon casks (12%). The first 5-part blend in Ireland bottled at 43.0% ABV.? It has an aromatic birth with notes of grains, wood, fruits, herbs & spices; while an elegant life adds notes of melted butter on seeded bread with honey, butterscotch, blackberry & peach; that led to a balanced death of medium length with a touch of toasty oak, black tea & brown sugar (I know, how unrefined).

Flaviar Advent calendar day # 12 Nose: tropical fruit, cereal, slight vanilla, mild nuttiness, honey. Picking up maybe a tiny hint of peat? Palate: salted caramel, toffee, mild lemon zest and vanilla. Strong fruitiness that's hard to pin down exactly somewhere between fig and cooked pineapple of all things. Spicy toasted oak. Sweet but not overly so. Smooth and creamy. Finish: chocolate, oak, mild grain whiskey bite.

More and more I'm finding that the whiskies I enjoy most seem to benefit from a cube of ice and maybe a splash of water... although just cooling off in the ice often does the trick. It certainly did in this case. A touch of sweetness and vanilla along with toasted wood, maybe some fruitiness if I concentrate. Not a trace of smoke or peat, and not really a spicy whiskey. It's nice on its own or in a whiskey sour.

On the nose, I get a lot of apple / pear, which I often get on Irish Whiskeys. The first couple of sips were fine, but not hallelujah. The more I drank, the less I liked it. Seemed young and a little harsh. Flaviar “The Irishmen”

A bit underwhelmed with this one. Typical whiskey notes of butter, sweet toffee and dried herbs. In the taste, the tangy sherry, earthy, nutty spice is short lived. The taste falls flat quick. Solid but wouldn't go back for more.

Vanilla apple custard on the nose. The palate is tart and fresh with a creamy mouthfeel. The finish is peppery. A little water helps to bring out more vanilla and fruit and make the finish a little less peppery.
