Nose: caramel, apples, fresh rain, pepper, banana pudding, dusty books, lemon zest, Taste: melted caramel, pepper, citrus, chocolate covered banana, fruit filling, finishing with a waxy condensed milk. More: this whiskey is one of the most complex I've ever had (and I've had a LOT of whiskey) every time I go back I find something new. It is also one of the most oily whiskies with a finish that goes for days. I must say I was skeptical of it with a $100.00 price tag and lots of big talk coming from the distillery, but I am happy to report that what's in the bottle lives up to the hype.
About this bottle
The initial set of Waterford's single farm bottlings for the U.S. showcases Irina 2015 barley grown on three different farms. All variables of production besides the specific locale of each farm were kept precisely in control, with the releases therefore designed to showcase the differences produced by terroir. Each was matured for just under four years, in a combination of casks including 35% bourbon, 25% French oak, 20% new American oak, and 20% VDN, short for Vin Doux Naturels, a sweet dessert wine from France. Casks were filled at approximately 72% ABV and the releases are each bottled at 50% ABV. Rathclogh was grown by Richard Raftice in Kilkenny.

Aroma is a tad waxy and gets a touch citrusy as it opens, bringing along some earthy grain and overripe fruit notes that remind me of closing time at a farmer’s market in the summer; Palate is a little more confusing and I’m not totally sure about what’s going on under the malt, toffee, citrus and sweet and nutty note – there is this odd over-roasted-touch-metallic note that isn’t good… but it’s not terrible either; Finish fades nicely to a warm nutty note and is the best part for sure.

Nice malty nose with crisp high notes of oak stave. Rich entry with a warm and sugary honeyed sweetness. A friendly and engaging mouthfeel. The sweetness fades after about 30 seconds, leaving the tannins to do their work. The finish is fairly long with the fade ending on a slightly tight and dry note. Overall, this is an exemplary rendition of a semi-traditional Irish.

The only thing keeping this from being a five star review is I wish the body was just slightly more full. But this is worth your money and attention. The professional description of tasting notes is pretty damn on!
