Nose: Hershey's simple chocolate syrup drizzled over walnuts, very light cinnamon, dark caramel and corn still in the husk. Palate: oily, light cedar, vanilla, floral, touch of leather, silky chocolate syrup Finish: Chocolate, walnuts, a touch of light roasted coffee, quick Overall...not a bad little whiskey. This is a chocolate bomb all throughout! It doesn't really linger a whole lot on the palate. I've had the nocino liquor before from watershed and it definitely shows in this bourbon! The walnuts, chocolate and dark caramel show up here from the liquor! However...I don't think this is worth the high price tag. I spent $109 on this. It's an interesting little experiment to try and I appreciate that watershed did it. Here's looking to 002...which will be hopefully cheaper in the future π
About this bottle
Each year, Columbus Ohio's Watershed Distillery releases a Barrel-Aged Nocino. Debuting December 2020 to mark the distillery's 10th year in business, this bourbon (aged nearly 5 years) was finished in barrels that once held that walnut liqueur, making it the first nocino-finished bourbon. This limited release was bottled at barrel strength at 59.5% ABV.

At first, I thought it was interesting and complex but the more I analize this, the less I like it. Very grain forward (young), sawdust, wet cardboard mixed with a bunch of notes from the Nocino Barrel (black walnut liqueur). I feel like they are trying to hide an inferior and young bourbon with a unique, extra aged finish. I would never buy this again.
This bourbon does not come across as a bourbon at all. The nose is straight potpourri, pine sap, and a hint of ginger snap cookies. The palate is entirely overwhelmed by more pine sap, herbal tea, and licorice. The barely-there finish is earl grey tea, pine needles, and a bit of brown sugar. What a disappointment. Not good at all. Genuinely unpleasant.
Nose smells like those scented pinecones that are strategically placed at the entrance of grocery stores during the fall which I love. Palate is okay - it taste like those scented pinecones, which I donβt necessarily want to eat. Overall, very good - a cut above.
Starts with a nose if pears. Starts with a bit if strawberry and black raspberry. Then some nice grounded walnut in the middle. Lingers with a spicy yet bitter note.
Last night. Liking it more as we go through the bottle - the nose is still nice and sweet, but now a lot of the sharp edges in the flavor have rounded off.
