Aroma is apple pie (apples, vanilla, touch of cinnamon) along with faint hints of caramel, orange spice, and a little butterscotch. Flavor is something a little tropical and spicy. Rough around the edges, but calms down with some ice. I really enjoy it with coke and lime, and it make a great daiquiri. But it wants to be a sipper and it's probably still a few years away from that.

Bayou Select Rum starts with Louisiana-grown sugarcane distilled twice in copper pot-stills in Lacassine, LA. Prior to bottling, it’s aged in ex-bourbon barrels for up to three years. The Bayou line of rums also includes Satsuma, Spiced, and Silver expressions.

Almost has notes of fresh fried beignets. Great spice notes through and through. Easy to mix in fun tiki drinks.
Great baking spice notes. Honey, brown sugar, nutmeg. One of my favorite rums to have in my bar!
