incredible. just enough vanilla and caramel to be reminiscent of bourbon, but not too much to be sweet. they leave some heat with the inclusion of heads. the barrels are recharred french oak chardonnay, aged from 9 months to 3 years. they use a constant fluxuation in temperature to absorb more flavor

About this bottle
This barrel-aged gin is made by taking the distillery's Jack Rabbit Gin and then aging it in newly charred French oak barrels. These barrels held white wine (usually chardonnay) and were freshly dumped. Beehive does all the charring in-house and the gin rests in these barrels for about nine months.
