Blinking Owl Old Tom Gin

It might be my preference for barrel-aged spirits, but this is literally the best gin I’ve had. The Napa wine barrels give it just the slightest hint of sweetness, far more subtle than most wine-barrel matured spirits (perhaps because it’s barreled for such a short time in white wine barrels rather than heavy dessert wines as is often the case). The slight age complements, rather than drowning out notes of juniper, orange peel, hibiscus, and sage.
