This one required two reviews to be complete on its assessment. My original review upon opening was that the whisky was unbalanced, rough, and overly tannic. My nosing notes originally contained strong vanilla, honey, green apple, and tons of pepper and oak. Very spicey nose. The original tasting was that the product was very harsh, young, and unbalanced. I did not like it very much. As I allowed the bottle to open and let the oxygen do its thing, the flavors opened up incredibly. I pour it through a wine aerator to really allow the oxygen to do its magic before drinking it now and the result is splendid. The profile is now consistent on each visit. New notes: Nose - still has a ton of vanilla, and honey, but there is now an overwhelming freshness of orange and lemon. The oak and pepper are still apparent but not as astringent. Tasting - Caramel, burnt sugar, toffee, and vanilla are immediately apparent on the palate, with pepper and alcohol present in the back of the throat. The finish is long and flavorful. There is much to enjoy with each sip and there is so much more than just burn now. This bottle just needs air to open her up and its a different experience. About this bottle
This whiskey begins with Kentucky straight bourbon (70% corn, 21% rye, 9% malted barley) distilled by Owensboro Distilling Co. and is aged at least 2 years. Then bourbon is dumped and batched into a tank and further aged with selected oak staves. In this case, 40% of the staves were former bourbon barrels, 40% new French oak staves, and 20% sherry cask staves. Bottled at 115 proof, this updated version was released in late January 2022.

This noses like a quintessential bourbon with vanilla/oak/caramel. There are some other notes that are burries a bit - maybe bitter orange or a slightly underripe apricot? Not displeasing at all, though. The nose translates well - this isn’t a super complex pour, however - caramel, vanilla, baking spice with some good oak. I do not find the oak off putting in the least. The finish is long but it doesn’t “burn” on the back of the palate. It is warm and stays with you like a 115 proof bourbon should. The value is where it’s at though - 115 proof good bourbon for under $40. Not much around to compete with that.
On the nose heavy vanilla notes with underlying oak and woody staves coming through. First sip has a quick flash of oak and black pepper then followed by leather finish and really nice linger and burn as it goes down. For a higher proof this one is good neat. Dark chocolate is pulled close to the top of the profile from the depths of this one with a cube of ice. Ice severely softens the pepper burn and turns this one into a dangerous one. Good for sipping any way you like it!
On the nose i get heavy vanilla, oak, and a hint white chocolate. On first sip Low end spice that slowly builds and lingrs. The high proof and heavy corn percentage makes the full mouth feel continue for longer than normal. There isnt much flavor other than spice. Oak, leather, and himts of char can be detected but not much more. Ice is what makes this better for me. Ice softens the burn and opens up the leather , tobacco, oak, char, and vanilla finish.
Straw, honey, orange and bread dough on the nose. A palate of bread, orange, honey, pecans and dried fruit, rough around the edges. I can see the trail mix reference from the expert review if not the chrysanthemum buds. Short tannic spicy finish with a mild citrus hit. Can’t say I’m a big fan.
