About this bottle

This expression was made up of some of the last remaining barrels of Watershed Distillery's original five grain mash bill of corn, wheat, rye, barley, and spelt—an ancient grain grown primarily in Ohio. The copper pot-distilled bourbon was aged four years in virgin char #4 white oak barrels and finished for 34 to 45 months in Watershed's own Ohio apple brandy casks. It is bottled without chill filtration at 120.8 proof. It is available as a distillery exclusive September 16, 2021 and in other markets as of September 18, 2021.

The color is magnificent, deep rich copper. Nose: Apple Cinnamon Cheerios, honeysuckle, toffee, & Red Delicious apples Palate: The 5 grain mashbill kicks in the door at first as it is a bowl of fancy oatmeal. That oatmeal sticks around but thankfully apples, peanuts, caramels, and honey show up late to the party. The sharpness of the barrel proof is upfront and just tingles throughout the sip. Finish: This whiskey shines here. It has a wonderful mouthfeel that hangs out. Apple skins, caramel, baking spice, and the graininess doesn’t show up anymore. Upfront this whiskey isn’t ideal for my taste. Dusty grains dominate but if you swish it around and let it linger it is an interesting and tasty pour.

Nose: Toasted wood and apple on the nose. Its a sweet and tangy apple. After a while I start to get almost a BBQ sauce vibe with the sweet and smoky vibe. Taste: sweet apple and oak, similar to the nose but i feel the nose is softer and the tastes smacks a little harder. You definitely get the apple brandy influence. Then there is some nice spice and cinnamon that lingers. Then the fruits turns more bitter then sweet, but not in a bad way. Finish: short on the apple and sweetness, but the spice is what lingers. Has a decent moth feel at first and then starts to dry out after a while. I keep going back and there is some development, but it is mostly the same notes.

Incredibly rich, dark fruit, soft spikes for 120ish proof. Vanilla nose is replaced with sweet spice aroma think fruit pie and the oak brings everything together. Over a large cube or as a julep, its amazing. First product I ever had from Watershed. Visited the Distillery to sample the rest of their selection and easily replaced High West as my favorite brand.

Off the neck, it’s thick, present, and woody. Tastes like the smell of an apple orchard in fall, which is probably the most obscure statement I’ve ever made. It’s good. $90 good? Not sure. But I don’t regret trying it.
