Castle & Key Rise Gin (Spring 2022)

This is the third seasonal spring release from Castle & Key since its restoration in 2014. Rise Gin starts with the same process and mash bill of the Kentucky distillery's rye whiskey up until the barreling point, where it is then redistilled into vodka, and redistilled again with botanicals in gin baskets, then condensed into a liquid. The botanicals include juniper, Tarragon, lemon peel, rose petals, green peppercorn, almond, green cardamom, and licorice. Bottled at 103 proof, it's available as of March 2022. (SRP $36)
