Honeoye Falls La Cascade Verte Absinthe Supérieure

This is an absinthe distilled by me. La Cascade Verte, the partner absinthe to La Cascade Rouge, is a traditional style absinthe utilizing wormwood, anise, fennel in distillation, and colored with hyssop, lemon balm, spearmint, and petite wormwood. The bottle proof is an imposing 70% abv, intended to facilitate traditional absinthe service and stand strong within cocktails that utilize the spirit. The nose has a prominent anise and spearmint character, with a light opalescent louche when diluted nearly 5 parts to 1. Palate is herbal, sweet, minty, and bitter. Stands well with or without sugar.
