Beehive Distilling's Jack Rabbit Gin starts with a grain-neutral spirit before adding fresh Albanian juniper, orris root, grains of paradise and coriander. These are cold-steeped for a few hours before redistilling the spirit. During distillation, fresh sage, rose petals and lemon zest are added.

Sage and juniper, with coriander floral citrus underneath. great expression of terroir (Utah sagebrush) in this new American gin. good juniper and a dose of sage. not too citrus.
