A balanced, satsuma-imo, by Junpei Kanemaru for the Kodama Distillery in Kyushu, Japan made by hand with 83% locally grown beni-imo purple sweet potatoes & 17% white koji rice; then bottled at 25% alcohol. It has a rich & delicate birth with tropical notes; while a delicate life adds notes of barley & candied yams; that leads to a rich & balanced death with hints of roasting spices. ('Satsuma-imo was introduced back in the Edo period.') October 2019 / February 2021
