About this bottle
This is an additive free small production tequila made from 100% blue Weber agave at Tequila Cascahuín (NOM 1123). The piñas are cut using a "double jima" technique, meaning they are shaved down a second time, removing most of the green pieces. The agave is cooked in stone ovens, extracted by Tahona, and fermented in a combination of open air cement and wooden tanks. This expression is made from only the hearts (hence the name) of the distillation (2x on copper pot stills), cutting the heads and tails entirely.
