The nose is surprisingly sweet with notes of vanilla bean, charred marshmallows, agave syrup and faint charcoal. Robust, slightly oily mouthfeel. The palate is a continuation of the nose with more vanilla bean and agave syrup, along with lemon zest, roasted nopales, wet soil and sea water. The finish is long, warm and satisfying, with nice peppery and minty qualities that, along with more vanilla and a hint of rose water, leave you craving another sip. Overall, this tequila is a bit too one-dimensional and sweeter than I like, but it is incredibly easy to drink, and the finish is pleasantly surprising.
About this bottle
The mountain town of Jesús María is the highest point in all of the tequila agave growing regions, and the El Pandillo Distillery-- located in the middle of these agave fields-- is one of the most forward-thinking and sustainable distilleries of all tequila. Master distiller, Felipe Camarena crafts this Highland style from stressed hillside agave plants which are slowly roasted in brick ovens. They are then macerated intact with fiber for a pronounced agave flavor that he then dilutes with 50% captured rainwater and 50% high mineral spring water. Additive free.

Recently had this from a busy bottle alongside the G4 Blanco at a bar. The best G4 Blanco I've ever had -- all the intense caraway and anise seed of an aquavit. However, the ArteNOM 1579 Blanco was head and shoulders better than the G4. No contest. Crystal clear color with rainwater, cement, lime zest, musk, old furs, and chalk aromas. Creamy and oily in texture with coconut pith, vanilla, celery, agave syrup and menthol flavors. I can't think of a better Blanco.
A dry, Agave Spirit by NOM 1579. It has an aromatic birth with notes of agave, wet earth, citrus, flowers, herbs & spices; while an herbal life adds notes of cooked agave, orange, celery, olive, anise, basil, dill & peppermint; that led to a long & minerally finish with notes of black pepper, almond & limestone.
Hard to argue with the quality. Aromas of celery, cement, white pepper, agave, and poblano. Viscous, dense, and subtly chewy, but cleans up with a nice peppery, white paper finish. Superb
Favorite blanco so far. Huge flavors, smoother than Cincoro. REVISED: Half the bottle later, I'm downgrading to 4.5. Still excellent. But definitely like Cincoro better.
I’m in love with this 1579. Is a beautiful spirit, so interesting and original, the tequila to go for when want to know how a premium real tequila taste like.
