About this bottle

To make this mezcal, mezcalero Aquilino García López uses tepeztate, a large wild-growing agave in the hills surrounding his ranch in the Yegoleé region of Oaxaca. This agave species takes around 12 to 15 years to mature. Because of the difficulty in finding and harvesting mature tepeztate plants in the wild, this mezcal is only produced is very small batches, often fewer than 500 bottles. After harvesting, the piñas are crushed in a traditional tahona and then fermented in open air pinewood vats with natural airborne yeasts. It is then distilled twice in an alembic copper still before being bottled by hand.

Intense vegetal notes on the nose and palate. Classic agave, olives, pimentos, and cucumber. Lingering, slightly salty finish. Wonderful!
