This bottling is a blend of column and pot still rums from the Caribbean, the US, and Central America. The rums have been solera aged in American oak ex-bourbon barrels, port wine, and sherry casks. After blending, the rum is then further aged in ex-bourbon to finish aging. A previous edition of this bottling was released at a lower proof, but this edition was bottled at 95 proof. Papa's Pilar is named in honor of Ernest "Papa" Hemingway and the brand was developed in conjunction with his estate with a portion of their profits going to charity. Papa's Pilar Bourbon Barrel Finished Dark Rum 95 Proof is a limited edition release of 2000 cases available beginning October 2018.

Getting into rum as a bourbon drinker. This has nice legs, full mouth feel, I get lots of spices, woody molasses...also too much wood and it is sweet! I rate this below others I have bought including El Dorado 15, Kirk & Sweeney 23, and my favorite sipping rum so far...Diplomatico Reserva Exclusiva.
Not a usual Rum drinker as Bourbon has been my spirit of choice for more than 30 years. However, this rum is OUTSTANDING! Perfect balance of sweetness, spice and oaky goodness. Very satisfying mouth feel with a medium, long finish. Delicious in all aspects! Cheers
This is a nice pour. My bottle was a single barrel selection. This line is a great bourbon rum crossover. It has dark molasses notes with some funkiness. A decent finish but was expecting a little more given the proof.
Maple Syrup, Caramel, Butterscotch, on Sunday morning Pancakes. Smooth and creamy mouth feel. Drink neat only. I went back and bought 2 more. Also got a store barrel pick at 110 proof from @barrelsandbrews
86 proof Rishi’s Int’l Beverage single barrel. Kinda new to rum but this is delicious. Little sweet with some cinnamon, vanilla, brown sugar, and oak. Really nice sipper.
Was pleasantly surprised with this rum. Lots of butter, butterscotch and caramel with a good amount of over ripened banana. Nice unexpected hogo funky finish!
