About this bottle

The 2021 Parker's Heritage release from Heaven Hill continues its heavy char series. The 15th edition of the series is composed of 75 barrels charred for one minute and 30 seconds (Level 5)—as opposed to the traditional 40 second char (Level 3) for Heaven Hill. The wheat whiskey—with a mash bill of 51% wheat, 37% corn, and 12% malted barley—was matured for 11 years on the sixth floor of Rickhouse Y. The whiskey is bottled at 61% ABV and is available as of September, 2021, and as with previous releases, a portion of proceeds will benefit the ALS Association.

Nose: initially I got dust, saw dust to the point I wondered if my glass had dust in it. It didn’t it was just the first whiff. Chocolate, caramel, mint, oak, smokey. Malty. Body: medium to full Palate: minty, chocolatey, vanilla Finish: long sweet and smokey, with some Kentucky hugging’ going on. Note: another taste from don from the 1010 tasting. Another bottle is like to buy. Tasted neat. First taste was really full bodied. I was surprised by how full throated this is. Very delicious. I liked this ALOT.

NOSE Oak, cherry-heavy dried dark fruit, roasted nuts, spice, slight farmy and biscuity notes. The oak DOMINATES the aroma, but not to the point of being one-dimensional. PALATE Oak, cherry-heavy dried dark fruit, roasted peanuts, cinnamon-heavy spice, leather, pepper, clove and bits of cornbread and vanilla taffy. More complex and, slightly, less oaky than the aroma. Still an oak monster to be sure though. FINISH Log -> Oak, dried dark fruit and peanuts fade to spiced oak.

Nose: Fantastic creamy wheat cereal, and a ton of vanilla and caramel. Palate: One of the better wheat palates I’ve had in the last 12 months. Vanilla dominant but there is a touch of all spice and apple. Finish: Only knock is it’s a bit of a short finish. Vanilla and spice go back and forth. Don’t pick up a ton of barrel on this. Definitely not over charred. On the sweeter side all around. Really like this.

Damn!!!! Insanely smooth for the higher proof. Great mid palate spice with a finish that evolves into pure joy. Best way to describe the finish is taking a spoonful of a crème brûlée at the very moment it just got torched. I never thought I’d say it but it might be a better char/toasted finish than Michter’s.

Wow! I love the Smokey sweet flavor to this whiskey. Nose: smoked. Candy. Taste: a sweet smokey fruity taste. Finish: the smoke comes through on the finish. Delicious The 122 proof doesn’t show its self.

My 13th tasting from the parker's line, only missing releases 1-3. Overall underwhelmed, this bottle is flat, hot and one dimensional. By no means a bad whiskey but certainly not elite in any way.
