I was wrong, there is another blanco tequila that deserves to be mentioned with Ocho, El Tesoro and Siembra Azul. Siembra Valles is not only amazing, but it's cheaper than the other three mentioned. At least in my area, it is also the hardest to find, but it's well worth getting if you see it. The nose is full agave with some citrus. On the palate I get a bit of spice, cooked agave and earthy notes. It's very well balanced. The finish is pretty long and has a bit of sweetness to it. There is almost no burn. For the price (if you can find it), it's hard to pass this up. They also have a high proof blanco and an ancestral tequila which apparently are both great. As you can imagine, this is amazing in a margarita and pretty much all cocktails you throw at it. If cost isn't an issue, then I would consider this on par with the El Tesoro and Siembra Azul. I'm giving it a slightly higher rating because it's a bit cheaper than the others, but you can't go wrong with any of them.
About this bottle
Valles is the brainchild of Siembra Azul founder David Suro, who wanted to create a tequila at the very first distillery he'd visited, Distileria Cascahuin (NOM 1123). The lowland Valles area in which it is located is known for its mineral-rich agave grown in the volcanic soils of El Arenal, Jalisco. The agave is slow roasted for up to 72 hours and shredded 4 times for optimal use of its sugars. It is meticulously fermented in a combination of Mamposteria (a stone structure enclosed by fiberglass) and stainless steel tanks. It is then distilled once in stainless steel with copper coil, then again in more slowly in small copper pot stills, bottled unaged.

Both raw and cooked agave to start, some minty herbal notes, some cilantro, dashes of floral notes, lime peel, granite earthiness, and some black and white pepper. The finish brings forth more minerality, herb and peppery notes that last medium to long duration. Fantastic mineral rich blanco coming out of the cascahuin distillery!
90” “HOLY WOW! Nose Agave Citrus Pepper Herbaceous Palate Agave citrus Light Honey Herbal/ Earthy Pepper Vegetal Agave Finish is long and oily. Pepper holds solid but fades nicely. The pepper spice pushes the agave and leaves a nice warm tingle. Art is here. Nice body. Balance is there.
A Silver artisan Agave Spirit crafted by NOM 1414. It has a delicate birth with notes of agave, fruits, nuts, herbs & spices; while a tropical life adds notes of coconut & mango; that led to a balanced death of medium length with a touch of pepper. May 2017
Vegetal, mineral, citrus, some pepper, green olives with brine. Smooth. Good body, but not enough agave sweetness to balance with the other flavors for me. Got it on clearance. Definitely a quality tequila. I would buy this again, but not at full retail.
This Tequila was marked down to a steel!! It is very good tequila. This tequila has a sweet clean taste with a good agave flavor and a pepper end. A solid choice if looking for a good mid priced tequila.
